as a chef i love to call out restaurants that does this shit. had a cowboy burger with bbq pulled pork. it came swimming in the grease the pork made when being cooked. when i explained to them to take the pork out of that grease and cook in bbq sauce with butter to order they proceeded to argue with me… lol

I've worked in restaurants my whole life. The majority of people I've worked with have been absolutely terrible at following proper hand washing procedures, following proper fifo first in first out procedures, and knowing just in general, what you should and should not do before serving food to people. Anyone can serve food but to do it properly, safely, and timely, is hard. Please tip your servers when they do a good job, because you could have ended up with the other guy that's actually a drug addict, or the one who literally never washes their hands, or doesnt wash their aprons, or doesnt know how to tie up their hair so it doesnt get in the food, there are 15 terrible food service workers out there for every 1 that knows what they are doing.
You have obviously never worked in a restaurant before. Perhaps you should have asked someone who does before making a video. All you have done is watch cooking shows which is nothing like actually cooking.
Then there's the flip side–waiting almost an hour for mac and cheese for a little kid who's flipping out.
I worked at Olive Garden for a bit. Everything there is frozen, shipped to store, then re-heated. Literally nothing was made from scratch ever in that place.
Then I worked out Outback where I thing just about everything (even some of the salad dressings) were made from scratch. The food, obviously, was much better.
adding my two cents: risotto is par cooked earlier that day. when an order comes up, you ladle some simmering broth from the saucepan next to it and finish it with parm. this video is a bit misleading

They could be made fresh but chances are most of you are not willing to wait an hour or more for a dish.
If you want it from scratch, you gotta be patient, you probably have to pay more because it takes longer
Basically all restaurants use premade.
Worked at many a restaurant like Texas Roadhouse, Applebee’s, Chili’s, and Outback Steakhouse, and you’d be surprised how many things they use a microwave for.

I went to eat at a local chain called the thirsty lion and they had a special menu item: shepherds pie. But it was made with beef (that would make it a cottage pie). I noticed the had lamb burgers and other ground lamb dishes. I asked if they could make it an authentic shepherds pie and sub the eel with lamb and I said I’d even be willing to pay the difference. They could not do it. That tells me that the pies were already made and not made to order. I’ve made plenty of shepherds pies and cottages pies, I know it doesn’t take that long to assemble and make.
I won't ever eat at a Chili's or Applebee's anymore. Last steak I got was obviously microwaved .

Something of note about the point of large menus, ethnic restaurant usually get a pass on this point. An overwhelming majority of their dishes share ingredients with some being substitutions for each other (chicken or beef). If you don’t believe me, go to a Mexican restaurant, once they open back up obviously, and order a dozen different meals at random. I’m willing to bet each on has rice, beans, flour tortillas, and the protein will be chicken or beef.
Of course lasagna is made in advance. It takes hours and is not made in single servings.
The same is true of smoked meats.
No one complains about catering companies which are precooked. That's the expectation. You shouldn't care about precooked items at a restaurant so long as you are happy with the result.
I worked at a restaurant that cooked their food to order. People were like Idc if you have 18 customers ahead of me 10 minutes for fresh cooked steak is too long.
If I go to a ramen joint, I don’t want to wait for 12 hours for pork broth to be boiled first. Don’t frame it like pre-made food is bad.

When a restaurant is busy, the food is probably coming out fast because they can afford to cook things in bulk while still being fresh. New Mac and cheese is being made like every 15-20 during a lunch rush because everyone’s ordering it. But it’s made in bulk, so yes, you’re going to get it as soon as you order it.

Yeah, about fish. Unless you live in a city on the coast AND are eating at the highest priced restaurant in that city, that fish has been frozen. Fish goes bad fast, so the commercial fishing boats freeze them right on board most of the time.
