It may be historical, it may be something on a list to go visit but I was just there this past Friday and I can totally say: unimpressed with food and service and on a side note so crowded we were constantly bumped by staff or guests going by table and the noise level is ridiculous. Maybe that’s their thing but for me not a fan of the noise… regardless the food was just ok. You can 100% go to many other restaurants there and get the same mediocre to ok food. Oysters were meh.

So it could last another hundred years you have to maintain the same quality, and the same menu. Once chef's start changing menus', and adding new things to the menu it becomes the chef's restaurant. The old traditions that kept this afloat for 100 years will slowly disappear and the restaurant could fail. The chef has to be good enough to keep the families, recipes and tradition.

I was in NO on a alligator tour and the guide kept saying Lafeet. I was like what is he saying and a local told me he was say Lafayette lol I heard the fisherman say it and it reminded me. I love NO
My Grandma gave me a recipe that her Father (my Great Grandpa) got from the chef of Galatoire's, back when it was maybe 15 years old, or so. I've made it, at home, here in VA and MAN is it delicious. It looks and sounds exactly the same.
