Any discussion of the Industries DLC should start with rule #1: Do not use the base game district specializations for your industrial zones. Don't zone an industrial area for forestry, farming, ore or oil because those districts will be getting deliveries of raw goods from your drop-off points. The trucks from log yards, grain silos, ore storage and tank farms will be making deliveries there and the refineries near the extractors will be constantly going empty of resources before the trucks that are delivering to those specialized areas come back and can then deliver raw goods to those refineries. This is why people see their "company" going from profit to loss to profit to loss ad infinitum.
I found overproduction to not be a problem if, as you said, the transportation network to get the finished products off-map is adequate. As a test case, I built a town of 3000 population with a forestry complex that had 15 small tree plantations, 4 small log yards, 9 pulp mills, 6 engineered wood plants and the 2 large warehouses for planed timber and paper: Exactly three times the need for specialized factories and it ran like a Swiss watch, regularly showing 10-20k profit with no imports EVER and no exporting of raw goods, it all gets refined into planed timber and paper. Adding warehouses only added more profits. The Furniture Factory I built right there almost never ran out of materials and the small log yards never maxed out their trucks.
To digress here, I agree with your efficiency fetish. Small tree plantations and log yards over large ones as long as space is not at issue: The increased cost of upkeep for large ones is not worth it. As a possible exception small warehouses may be worth the increased upkeep cost because in getting same the storage capacity you get from 3 small warehouses that you can get from one large warehouse you get 20 more trucks to make deliveries with. In my test case the two large warehouses were adequate even though they had all 40 of their trucks out most of the time and though set at balanced were 85-95% full all the time. I'm pretty sure 6 small warehouses would increase profits somewhat because simply adding them to my standard industrial district did increase profits, but I haven't tested using them exclusively yet. They may only stay at 50-70% full and be using 80 trucks between them too, invisibly cutting my profits by being an added upkeep expense not showing on the books of "the company".
I did the aforementioned test using the unlimited money and unlock all mods. I have not gotten to the other industries yet and cannot say how well the factories that need processed materials from multiple industries will do, but I suspect a cargo rail system that delivers only to a central manufacturing complex that has those remaining industries, and the 8 warehouses for their needs, will have no problem keeping them running at 150% full time with no downtime waiting for materials, and I suspect it may only need small warehouses to keep them going at that.
Furthermore, it may be wise to have that complex's roads serve it alone with no outside road traffic at all. Have the workers go there through the metro and let each factory deliver it's products to the cargo station where their products will be delivered to the various other stations for delivery through those cargo stations' trucks, which are unlimited and so make distance-to-delivery a non-issue.
As far as building workers' barracks in order to get the numbers up so you can get 5 *'s: I've not done any experiment on that yet. Certainly the extra efficiency will increase production but will the extra upkeep expense diminish profits? I don't know. But if it does, making the building of workers' barracks a net loss, won't it be better to just enlarge the operation so that you will get enough workers to get 5 *'s from a balanced production complex? I suppose there's probably a cut-off line in the size of the complex. If you're only going to do the minimum to supply the special factories, I think the workers' barracks will be a net loss of profits; that the increased worker efficiency won't be worth the upkeep expense for them. I also think going to the maximum of a balance of extractors, drop-offs and refineries to get the requisite workers will then probably be past the point where you may as well build workers' barracks as the initial expense of their construction will pay off in the long run. The only deciding factor will then be how much space are you willing to use to build "the company".
How much space to dedicate to "the company"? If you dedicate 10% of a single tile to each of the four industries, that will amount to 1.6% of the space within the 25 tiles you're allowed in the base game.

Sounds like you are doing better, it's good to see you back here with a new episode. Not that you've been away; I've seen a few of your comments on BBB's What Map's… 🙂 Thank you for the video, I specially like how you edited it… very clean!
I try to not over-produce but it's hard to keep track. I like your idea of a spreadsheet. One thing I learned a while back was to plan the routing inside a industri area so the trucks don't have to drive around too much and be careful with busy buildings on main roads.
