im kind of new in this but i really enjoy a good espresso, and in my up to date experience, i found what you say about lighter and darker roast to be very true, you really need more work with lighter roast, i find it more easy with darker roast and i may find darker roast better to the taste because im having a hard time with the light one, and btw good job i like your content

after watching James' videos, I realized consistency is critical. I find my ice cream scooper is the perfect amount for a batch.
Why are the portafilters defined by grams they hold when the reason James seems to give is about volume: empty space above the coffee can create a mess.
A fine 18 gr grind would fill the filter way less than a coarse 18 gr grind.
Anyone any ideas?
Finally someone that acknowledges the Italian tradition of 14 grams and that more is not better. Grazie.
This is a fantastic explanation of the subtleties of dialing espresso grinders, however it's slightly pernicious for the commercially employed barista. Tweaking dose weight in grams is a slippery slope (+/- 0.5 variance is acceptable), so it's best to find the right grind size that matches the suggested dry dose weight determined by the roaster. Track weight, dial the grind, find the sweet spot.
Been enjoying 15g or 16g in and 30g out recently, With lights roasts.

What difference does grind size and dose have vs timing? I have a BES870XL and grind on 4 with 17g and my machine factory setting takes 58 secs from first drip. Pressure shows towards high side of “in pressure range”. Is this too long?

A 10g dose in a single portafilter dialed in correctly yields a fantastic 1-1.25 oz shot.
I dont understand this: if Italians use 7g ground coffee, does that mean they only get 14g of liquid with the 2:1 ratio? That would be too little coffee wouldnt it? Can anybody explain please? Thanks
James, you mentioned caffeine content and using lower doses to limit one's daily intake. I'm curious about your thoughts on decaf beans (specifically Swiss water decaf) with regard to flavor. Are they worth it or does the process ruin the flavor? And, what about a half/half mix of caf/decaf beans?

Great video! If I'm going for a double shot espresso when making my flat white, I could use the 2:1 ratio (18g of weighed coffee with a 36g of liquid espresso in around 25-30 seconds). Now, I also like to drink my single espresso shots drink without milk or sugar. Please explain to me a a similar formula? as I am assuming just halving the ingredients and time may not work? Would greatly appreciate your response. Thanks
